You can make life a little simpler by putting together these angel food cake mixes to have on hand as needed. I usually make 3 at a time.
You can make this cake super fast when you have all the dry ingredients pre measured. If you are going to be in a super hurry when you make it, you can peel and shred the carrots ahead of time as well. I generally just use Pillsbury cream cheese frosting, be sure to let the cake cool before you frost.
